Ingredients:

1. pompano fillets 4 or 8 halfs

2. 3  chopped medium yellow onions

3. 1 chopped bell pepper

4. 1 stick of butter

5.hand full of chopped parsley

6. tops of 8  sliced/ chopped green onions

7. 1 regular size can of tomato sauce

8. one can of Campbells "Cream of Shrimp" soup

9. Cajun seasoning of your choice.

10.Thickening agent... Gravy power or instant roux.. even flour can with.



Cooking Method

Melt the stick of butter. Add the chopped onions and bell pepper....Cook them down until semi clear.
Add the can of tomato sauce.. Stir good.. Add the can of "Cream of Shrimp" soup. Stirr good. Brind to a simmer and cook for 10 minutes. Sprinkle half the parsely on the sauce. Dust all the fillets with Cajun Seasoning. Lay 4 halfs in the sauce. Sprinkle some thicking agent on top. Top with 1/2 of the rest of the parsley and 1/2 of the green onion tops. Add the other 4 halfs of fish fillets 90 degrees to the first layer.Sprinkle some more thickening agent on this layer too. Sprinkle all the rest of the parsley and green onion tops on that layer. Cover and bring to a slow simmer for about 1 hour. don't Add any water... Let it cook and thicken up.... Once done let it cool of to warm... Serve on top of a bed of rice.. Try to lay the cooked fillets on the rice and top with the super flavorful sauce gravy.... This is so good!!!  Enjoy!!!
