Until Monday I have always released pompano or used them for shark bait but I finally decided to catch a mess for the table after hearing all the hype about them. Came home with 20 or so and cleaned them. Froze most for later but fried up a few... They were terrible! I know there has to be a better way or everyone wouldn't be going nuts over them. Someone please help me out before pomps become shark food again

That's odd. I just fried some up myself and they were great! Even my wife really liked them.

Can I come by and pick up the remaining frozen pomps? I will give them to someone that will enjoy them. I have tried them fried and pan grilled. I enjoyed them both ways. They do have a slightly different taste.

Smoking them is good also. Problem is finding rolling papers big enough though.

BAHAHAHAHAHAHA!!! One of the funniest things I have read on here in a while! Back to the situation at hand......We had some fried Pomps last week and they were AMAZING!!!!! Operator error???

Pompano are a dense white fish and I had smoked them on the pit with
great results. Jacks are dark and bloody.

i fry mine also but i bake them too. i cut slits in them and stuff orange slice or lemon or lime into the slits with some spices too. bake at 350 til fish flakes i check after 15 minutes then every 5 minutes. i will pour vinegar over the piece i eat usually malt vinegar. same with the ones i fry. pompano is really good.

Ever since then, I've been hooked on smoked Pomp. Pomp smoked with alder wood is the best. Read the part that Tyler posted.

Thanks for all the replies. I'm going to bake or grill some tonight to see how they turn out. I don't have a smoker or I would give that a try too. Maybe it was something I did wrong while frying them but I doubt it, we eat fried fishevery Sunday at my house. Looks like some decent recipes on here so I'll keep trying. And yes they were pomps not jacks, not really sure how anyone could confuse the two.

I also like them poached in a Court Bullion. I eat them like lobster dipped in drawn butter.

I like to grill them whole, scored, w/garlic butter.
court bouillion sounds good, but firm redfish do really well there....
