Do people eat them?. I heard they were not very good. If they are not what do you do with them?

Some people use them for shark bait.

Other than that, catch and release.

Good bait! Big ones for sharks, smaller ones for just about anything else.
I wouldnt recommend eating one.

Jacks??? Confused That's an open-ended question.

Would I eat a:

Jack Crevalle - NO!
Horse-eye jack - NO!
Blue runner (hardtail) - NO! (but apparently it quite the dish in NY City?)
Yellow Jack - NO!
Atlantic bumper, Mackerel scad, Round scad, Redtail scad, Rough scad, Bluntnose jack, Pilotfish, Leaterjacket, Bigeye jack, Lookdown, Atlantic moonfish, Cottonmouth jack - NOT A CHANCE !!

(Although I have seen Lookdowns in the fish market in Merida, and thought to myself - "just how many Lookdowns must one eat to make a decent meal"?)

But give me a:

African pompano, Black jack, Bar jack, Rainbow runner, Amberjack (Greater or Lesser), Almaco jack, Rudderfish, Permit, Pompano, or Palometa - ANY DAY OF THE WEEK Razz

Every one of these can be described as a "jack-fish".

The general term of "Jack" is just too nebulous.

Very true, but I was limiting my list of "jacks" to Gulf of Mexico species.

But you are right, never pass up some Hamachi Cool !

I tried an African Pompano I caught offshore of Port Aransas years ago and It was trrrible. It was similar to eating cotton, the more I chewed the bigger it got. Have you actually tried one or just saying from others experience, just curious. Wonder if I just happened to get a bad one. The one I tried was only a couple pounds and was caught bottom fishing in pretty deep water. Confused As far as Jack Cravelle, I tried one fried once along with bonita. The bonita was much better, but I have no desire to try either again! Laughing

Definitely 1st-Hand experience on the African pompano. Are you sure what you caught and ate (but didn't like) was really an African pompano? A 'couple of pounds' is pretty small for this fish, they tend to be bruisers. They are great table-fare, especially the hump of meat that circles around the top of the head!!! (Similar to the chuck of meat on a dorado).

You might have run into a Horse-eye Jack. They look very similar to an adult African pompano. And Horse-eyes are not know as great eating. Just a thought.
