It was a pretty good season and I can't be the only one with a fair amount of South Texas duck breasts and gizzards to make it through. Redheads don't exactly top my list of delicious game meats, but even the wifa enjoys them cooked like this:
Get the veg ready. Standard stuff for dirty rice. GBP, celery, onion, garlic (yeah it was the stuff in the jar, sue me), jalas, etc.
Buzz the crap out of the breasts, cleaned gizzards, and whatever else you retained. Mmm appetizing!
Sweat the veg with a little butter, Tony's, cayenne, whatever.
Throw in and cook the duck goo.
Mix with rice cooked in chicken stock. If you use water, you will probably need to up the salt content somewhere along the way. Lots of hot sauce.
I wish I was a grill'em medium rare and dig in type of guy like I usually am with game, but this, duck chili, and duck gumbo are about the only preparations I have tried that I am interested in eating when it comes to South Texas ducks. Can't exactly shoot and release - anybody else got any good camouflage recipes? _________________

Actually, when I used to duck hunt I found that using them in place of chicken and making duck and dumplings was an OUTSTANDING way to eat them!!! I also liked the breasts marinated and then grilled to rare with hickory or mesquite. In my experience, any more done than that and you might as well be chewing on and old shoe that has a livery taste!!!!
The quickest way to turn someone off on duck is to cook it one of the traditional ways in the oven, for freaking hours, with apple, onion, celery or whatever stuffed inside. CRIPES..................... tough and chewy liver!!!!!  _________________ Dave

| That sounds almost edible and worth trying. I tried just about every way I could to cook and enjoy eating a duck in years past. Never got it right! Pretty much gave up and eventually quit hunting them. That looks pretty good though. May have to try it next year. |

I once took a de-boned duck and stuffed it between a turkey and a chicken, surrounded by spicy cornbread/biscuit sausage stuffing and it tasted fine. Sure was a lot of effort just to make a small duck taste good.  _________________
