Ran acrosss this recipe in the Dec TX Saltwater Fishing Magizine...
4 Fresh fish Fillets
2 Tbsp Adams Reserve Fine Rub (HEB)
2 Tbsp Orange EVOO
4 Tbsp Mayo

Heat oven to 450 degrees

Small bowl mix orange oil and mayo

Spread mixture over fish then season with the Adams Rub

Place in oven bake till golden brown or 15 minutes


I made a slight variation by adding a pinch of salt to the fillets, I find the rub to need a litlle salt,for my taste. I also had to make the Orange EVOO buy buying pure Orange extract from the spice isle at HEB and putting a few drops in the oil before mixing it with the mayo, please use Hellman's Mayo as I tried Miracle Whip first and the mixture broke apart even after whisking it vigorously...The Hellmans infused well and stayed together then I sliced up some avacodos and served it with baby greens! I also put some of the oil/mayo mixture on the fillets and it was all delicious!
