you steak the king
and on the top right, top left, bottom right, bottom left portions of the steak you can use your fingers to push the meat out
and you roll it into a little ball
at least thats how i know how to do it |

I cut about 2in to 3in strips down the whole fish from front to back and take my fingers and push the meat out and they come out in perfect balls _________________ IF I DID NOT HAVE BAD LUCK I WOULD NOT HAVE ANY LUCK AT ALL!! |

This is what I did. Lay the fish on its side. Make cuts from the top of the back to the belly in about 1/2 to 1 inch wide strips. Then poke your finger in and push a piece of meat will come out fairly easy. This is the tenderloin. You will get the hang of it. Here are pics from my first time doing this thanks to tyler and skipper.

This is after it comes out of the deep fryer.

Man, Rabbit, that looks good. I remember one time that guy from SFCCI (for some reason can't think of the name, nice ole fella, from Oklahoma? Hardhead? Had a RV to camp on PINS) ..... anyway...he got a king mack from the beach and fried it up fresh. Dang good eats. I had always heard that kings weren't that good but it was tasty that day.
Hey Tyler, was that Hardhead? Gary something? Seems like decades ago..
