OK, Mole next week, Sofrito for now! Got my two rabbits total cost was
9$ and some change. Stored one for another day and cooked one up with a quick and easy Sofrito sauce base from a Jar(sinner).... Served with a pot of Spanish rice!
1. EVOO lightly sweated 1/2 onion and garlic
2. Salt and Pepper to taste then Browned Rabbit quarters(2min)
3. Two Sofrito Sauce jars, added 1/4 cup H2o to thin out
4. Simmerd medium for 15-20min
5. Topped with Cilantro after simmering

Total Time ~ 30 min!

Nice! I almost picked up some more but we have too much meat in the fridge as it is.
