I found some whole rabbit at Michoacana market for 3.00 per pound so I bought two and made my normal Arroz Con Pollo recipe substituting rabbit for chicken. First I had to cut up two rabbits and remove the silverskin



Then I dusted them with flour added ground pepper, and Tony's and browned them.



I deglazed the pan with some white wine and added some minced garlic and one large diced yellow onion and cooked that down until the onions were translucent.

I put rabbit pieces in a baking dish smothered with the goodness of wine, pan leavings and garlic, added one can of rotel tomatoes and a bit of ground cumin and chili powder and a bit of smoked paprika. I placed it in the oven at 350 for about an hour or until done . While I was doing that I made brown rice in the microwave oven using chicken stock etc.

Then I combined everything into the baking dish and added frozen peas and olives. It turned out great though Kelle would not eat it.

It turned out great though Kelle would not eat it.

Too bad. It looked great. (Will have to remember this recipe come January when my daughter has her 4H rabbit project again this year!!)

On a related note, but without pictures Crying or Very sad , I made a dish the other night that was not too shabby.

- Pan seared, almond-crusted sockeye salmon
- Curried couscous
- Grilled asparagus

You know that life is good when your kids will eat all of that!!! It turned out great.

I was just there last wk, to price the rabbit and it's super affordable!!! My mom used to make rabbit Mole and I plan to make some next week!
Spanish Rice, corn torts, pico and a cold one will do just fine!!!

We bought some mole there too and I almost did it in mole but the little woman had plans for that on some chicken.

Loves me some rabbit every now and then. But it is overly expensive at the heeb frozen meat isle. Which michoacana location is this (i think there are a few?)?

I went to the location on Ayers where Pancho's used to be...For one rabbit it was gonna come out to jyst under 7 dollars or so,,,, IMO thats alot cheaper then leasing a ranch, driving to your lease or buying ammo, which in my case as kids we would hunt em' with old bearings and a sling-shot! We were poor but never hungry, lol!

That's the one! And you don't have to wait until it gets cold to get a rabbit.
