We made our first attempt using my wife's Christmas grinder to make sausage. We bought boneless skinless chicken thighs, ground them up and then added poblanos, cheddar cheese, lots of garlic powder, smoky paprika, salt and pepper, red chili flakes and stuffed them into genuine hog casings. Lots of fun and they came out great!

Great grinder. For sausage get a sausage stuffer as you have to grind your meat again to stuff the sausage casings with this and almost all grinders that have sausage attachments. It tastes good but you don't get bigger bits of cheese or peppers, more like the consistency of Boudin. |

So does the mixture have to pass through twice? Once to grind and once to stuff? _________________

Good information Tyler. Since my bride has a Kitchen Aid mixer, I decided to go with the grinder/stuffer attachment. I will post my first results in a week or two when it all comes together. _________________
