So I remember this topic coming up about the same time last year
but can some one refresh my memory. If I were to go and net up
some Mullet and wanted to save them for winter baits, what would

It is not a good thing to freeze mullet. Once its thawed the meat is very loose and very hard to stay on your hook. Fresh mullet is the best way to go. I figure if you are wanting to use some type of bait in the winter, I would go with fresh shrimp if mullet is not available.

If you freeze the mullet, salt and dry them a bit before freezing. It gets the moisture out so the ice crystals don't turn em to mush. then vacuum seal em an freeze away or wrap em in news paper and zip lock em.

you can brine your bait this will make it last longer i do this with ribbonfish and mullets even shrimp it will not be mushy after thaw

Arrow we used to catch up a net full or two then make strips like filets
and put them into 1lb coffee cans. cover with water and freeze them in can with plastic lid, usually popped off in freezer so be careful. The red fish up around port o tore them up all winter and into spring.

After cutting off tail I hook frozen mullet thru lips. Stays on good.

No expert by any means but have been using frozen mullet with success for a few years.
Use kosher salt and simply put the mullet in a container or bag, sprinkle on the kosher salt(enough to be able to spread a thin layer over top), shake, rattle and roll the bag or container and then after allowing it to sit for a few minutes, drain liquid and pop em in the freezer.
They stay on the hook best when initially taken out of the bag and put on the hook and will eventually become mushy but just a little less than the live guys.
I have tried cutting them into usable pieces vs. freezing their little bodies whole and it does not seem to make a difference----so I just throw the suckers whole into my bag/containers.
My 2 cents(but what do I know----I believed Jerry Jones when he said the Cowboys would be in their hometown Superbowl!

I always froze them in plastic bags. The jacks, reds, tarpon and shark eat it mushy as well as firm. Just means you have to change bait more often. Wink

put bag of ice into chest level ice fill with water to the top of ice
put in one box kosher salt one box arm&hammer mix well put in any kind of bait close lid let soak for at least 6 hrs take out

put into bags large baits ribbonfish ballys other large baits wrap in foil

bait will be stif but will soften in the water with out becoming mushy

drifting bait last 3 times longer
