I modified a recipe from a Cajun cookbook to make these shrimp balls.
Here's my version more or less......
2- large russet potatoes - boiled and mashed
1/2 cup- yellow onion chopped fine
1/2 cup- bell pepper chopped fine
1/2 cup- celery chopped fine
1-egg-slightly beaten
2 pounds- Gulf Shrimp deviened and chopped fine
Any Cajun seasoning - flavor to taste
Peanut oil- to fry in
Corn meal- to roll the balls in before frying...

Mix the mashed potatoes,bell pepper, celery ,onions, shrimp,egg and seasoning in a large bowl with your hands like when you make meat loaf. Put the mixture in the fridge for 2 hours until cold. Now take the mixture out and make golf ball size balls and roll them in the corn meal and set aside. Take all the shrimp balls and put in the freezer for 1 hour to make hard. Now just deep fry them in the peanut oil at 360-375 degrees until golden brown... Set on a paper towel and let them cool slightly. then eat them with your favorite dipping sauce.. I used ketchup....
