POOL’S DEER CAMP, FISHING SHACK, FOOTBALL-WATCHING TAMALE SOUP
1 lb extra lean hamburger meat; 1 T cumin, more if you like
1 medium onion, chopped; 1 dozen tamales;
1 pkg. frozen corn (1 lb); 2 cans beef broth (14 ½ oz)
2 cups pinto beans, cooked; 4 cans water (14 ½ oz)
Chili powder to taste salt & pepper to taste (or use
Fiesta fajita seasoning!)
1. Ice down 1 case of beer – brand is your call.
2. Brown meat and onion in large stock (soup) pot.
3. Open beer. Chuckle, down it, burp, go to next step.
4. Drain off drippings from meat. Add remaining ingredients, except tamales.
5. Repeat step 3.
6. Bring to a boil, reduce heat and simmer for about 30 minutes.
7. Repeat step 3.
8. Shuck tamales and cut each one into 4 pieces.
9. Repeat step 3.
10. Add tamales and continue to simmer until tamales are heated – do not boil.
11. Repeat step 3. If there is no “next step”, repeat step 3 anyway.
Personally, I use lots of chili powder, fajita seasoning and more cumin than the recipe calls for.
I like to cook this down into more of a stew than a soup – guys like stuff that you can chew. And use a jumbo pot – this recipe makes a goat-load of food. A little grated jack or cheddar on top with some fresh onions and cilantro at serving time is an absolute killer as well. |

I'm gonna try it. probably substitute a couple pounds of fine chopped venison and more than likely spill a beer in it too. _________________ the creepy uncle that scares the kids.... |

Sounds great. I will probably try the venison version as well. We have about 15 to 20 doz venison tamales made each year. IN TIME FOR CHRISTMAS!!! May put this on the Christmas menu this year.  |
