I cooked these up for my father's homecoming Sunday. In the northwest, those in the know flavor their BBQ with Alder wood. It is their version of Mesquite and you can buy them now at HEB. Soak them first then put them on the coals.
I put Lawry's salt, pepper and butter.
After 11 minutes these were done.

Actually that is not foil but newspaper. My salmon fishing mentor, my late uncle Si, showed me that if you lay the fillets on three or four sheets of newspaper or one side of a large brown paper grocery bag,you can toss the fillets directly on the grill. There is no need to turn them over. After you take them off you can serve the salmon and the skin sticks to the paper below. I never got that cedar thing. Most of the indian tribes roasted them on Alder. Cedar is used to keep bugs out of your clothes due to its strong scent but it seems the chic thing to do these days. To me it smells like hamster cage shavings. It reminded me of a Martini I had at Ray's Boathouse on Shilshole Bay in Seattle. They served a fir martini that had Douglas fir flavored Vodka. I swear it tasted exactly like Pinesol with Vodka.  |

I never really understood the cedar plank theory either. Next HEB trip I will request paper instead of plastic. I really don't want my fresh, expensive salmon touching the Caller Times rag.  _________________
