These halibut steaks are 2 to 2.5 inches thick.
Plus Ive got a King steak I'm going to try as well.
Think I should slice them down the inside of the filet to make them thinner?

Don't thin anything unless you're making jerky. Thickness ensures moisture. Check the filets occasionally until you can run a fork through them, so you don't overcook. My Brinkman waterpan smoker will do (has done) halibut as thick as that in 2 1/2 hours, but variables such as air temperature outside and how much charcoal you use can lengthen or shorten cooking time.

I use a Mr Smoker i dont know if thats a brinkman or not. But go to academy and look at what they have. Very Happy

Might as well get a REAL smoker if your into it. Those ones sold at Academy wont last. Need one made from 3/8 to 5/16 min pipe with the fire box off to the side.
