These halibut steaks are 2 to 2.5 inches thick.
Plus Ive got a King steak I'm going to try as well.
Think I should slice them down the inside of the filet to make them thinner?

| Don't thin anything unless you're making jerky. Thickness ensures moisture. Check the filets occasionally until you can run a fork through them, so you don't overcook. My Brinkman waterpan smoker will do (has done) halibut as thick as that in 2 1/2 hours, but variables such as air temperature outside and how much charcoal you use can lengthen or shorten cooking time. |

I use a Mr Smoker i dont know if thats a brinkman or not. But go to academy and look at what they have.  _________________ Fishing and Kayaking its a rough life but somebody has to do it.

Might as well get a REAL smoker if your into it. Those ones sold at Academy wont last. Need one made from 3/8 to 5/16 min pipe with the fire box off to the side.
