tyler, how about a hunting forum to compliment this site? I have two hogs and a doe to be deliverd to me on ice this Monday...I do not know what to do, so my learningn curve is from fellow hunters and the net!

Wild hogs are super good eating as well as being really good for making sausage. following is my favorite recipe for making sausage and it is set up for 30 Lbs. of boned out meat.

15 TPSP SALT
10 TBSP BLACK PEPPER
5 TBSP GARLIC
5 TBSP SUGAR
5 TBSP CRUSHED RED PEPPER

I take the boned out meat to a local game processor to be ground, spices mixed, and stuffed in links. I then smoke it at home before freezing it. You may have to add some pork fat to the wild hog since they tend to be pretty lean. Attached is a photo of 9 wild hogs I caught yesterday, 7 boars and 2 gilts. I made barrows out of the boars to grow some more and kept the gilts for sausage.

the recipe above is a little high ion the salt side for my taste

try using:
5 tbsp of sea salt (not that metallic tasting iodized stuff)
5 tbsp of fresh sage
two tbsp of sweet basil
8 tbsp fresh garlic (minced)
2 tbsp fresh chopped thyme
5 tbsp fresh cracked black pepper
2 tbsp ground papirika (hot)
1 tbsp cayenne pepper
1 tbsp fresh chopped jalepeno (not those fake pickled ones)
1 tbsp dried chopped onion (not onion salt)
1/4 tsp (teaspoon) liquid smoke

if you like it sweet tasting add 1/3 cup dark brown sugar + 2 tbsp granulated sugar - or you can substitue real maple syrup for the brown sugar if you want that maple flavor

A few weeks ago I shot this critter out in front of my house nosing around in my garden.....



He weighed between 125 - 140 lbs. and as far as what to do I just skinned him out and processed him like I do a deer. I've got ribs to try, pork chops, roasts, etc. I've already made some carne guisada, smothered pork steaks and chili.

As far as sausage goes, HEB sells some no-brainer sausage seasoning that is great. I mix ½ pork and ½ venison and the seasoning and it's great.

Anyone know where I can get some good Christmas tamales made?

I have always wanted to shoot a suitcase wild hog. I love the BBq'd wild hog I have had. I'll think about adding a forum

Could have Corpushunting.com LOL!

WE HAVE WILD THAT HAS BEEN MIXED WITH DOMESTIC AT OUR RANCH. AND I TELL YOU WHAT, YOU CANT BEAT A 60-70 LB PORKER ROASTED WHOLE. YEAH LETS EAT

ive got two at the processor right now on leopard getting some jalapeno cheese sausage made along with sum other stuff. they fielddressed 82lbs and 73lbs. perfect eatin size. i also have a little one that i brought home with me... he dressed about 25lbs or so. he's tasty....thomas
